Yum! Vegan Almond Chocolate Chip Cookies!

Episode 3! Vegan Almond Butter Chocolate Chip Cookies!


Ingredients:


1 tbsp ground flaxseed

1/4 cup coconut oil

1/4 almond butter

1/2 cup brown sugar

1/4 cup cane sugar

1 tsp vanilla extract

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp sea salt

1 cup rolled oats blended to flour

1 cup almonds blended to flour

1/4 cup dark chocolate chips


Directions:


1. Preheat oven to 350ºF


2. Mix flaxseed and 3 tbsp of water and set aside for 5 minutes


3. Mix coconut oil and almond butter then add the sugars and mix for 1 minute


4. Combine flax seed mixture, vanilla and coconut oil/almond butter


5. Mix in baking soda, baking powder, salt, oat flour, and almond flour


6. If your dough is dry add a little almond milk, mix in chocolate chips


7. Place 1 inch balls of dough 2-3 inches apart on a baking sheet (use parchment or pam)


8. Bake 12-14 minutes


9. Cool for 5 minutes


10. Enjoy!
